Why? Why...do I always think I will like meringue icings? I never do.May be it's the fluffy marshmallow-y goodness that seduces me.The cake part of the cupcake was incredible.It was tender and moist with mini chocolate chips through out the cake. The cake is a definite keeper, but the meringue icing will never be made again. ( I hope)The taste testers at work loved the cupcake including the icing. The "tasters" felt that the meringue icing complimented the dark rich cupcake.The cake part is too rich for a traditional american buttercream, maybe an italian buttercream?I am definitely going to tinker with Dorie Greenspan's "Devils Food White-Out Cake" for awhile longer.

The icing may not be a regular...but it looked beautiful! The cook doesn't have to love the icing, especially if the testers do.
I made this cake for the exbf's birthday a couple of months ago. I found it very sweet, but he really liked it.

Actually this has to do with macaroons (your 5/11 post) which, I might add look pretty good to me. Check out Kuidore at hppt://brandoesq.blogspot.com. Her current post doesn't provide much, but you can see she's got the technique. I'll bet she'd reply to you if you wrote.

You don't know me but I read your blog hell often. =)the cupcakes look devilicious though but yes, I've made the marshmallow icing a few times and I'm just more of a sticky kinda fluffy cream cheese icing-its got more substance. =)
I find meringue icing to be a little too sweet although they do have a certain cloud-like beauty! I'm a buttercream girl all the way!
Mmmm... devil's food. Personally, I think I have made a decision that I do not like meringue all that much. It's okay sometimes, but only with fruit i think, would have to try with chocolate.
